Made with soft whole wheat dough and generously stuffed with a flavorful mix of grated cheese, fresh vegetables, and mild spices, every bite is cheesy, wholesome, and satisfying. Cooked until golden and crisp on a hot tawa with a touch of ghee or oil, this easy recipe is both nutritious and filling. Pair it with green chutney, tomato ketchup, curd, or pickle.

For the Dough:
2 cups Wheat Flour
to taste Salt
as needed Water
For the Stuffing:
small Oil
1 cup Onion (finely chopped)
1 cup Green Capsicum (chopped)
1 cup Green Capsicum (Finely Chopped)
1 cup Cabbage (chopped)
to taste Salt
pinch Red Chilli Flakes
2 cups Grated Cheese
For Cooking:
as needed Oil
as needed Butter
as needed Clarified Butter (Ghee)
Step 1— Prepare the Dough

In a mixing bowl, combine 2 cups of wheat flour with a pinch of salt.

Gradually add water while kneading to form a smooth, soft dough.

Cover the dough and let it rest for 20 minutes.
Step 2— Prepare the Veggie Stuffing

Heat a small amount of oil in a pan over medium heat.

Add finely chopped onions and sauté until they turn soft and slightly pink.

Stir in the finely chopped capsicum and cabbage. Cook until the vegetables are dry to prevent the parathas from tearing.

Add salt (use sparingly, as cheese is salty), Italian seasoning, and chili flakes. Mix well.

Remove from heat and allow the mixture to cool completely.

Once cooled, fold in 2 cups of grated mozzarella cheese.
Step 3— Assemble the Parathas

Take a portion of the dough and form a ball. Dust it with dry flour and roll it out slightly.

Place a generous amount of the prepared cheese-veggie stuffing in the center.

Fold the edges of the dough toward the center to seal the stuffing inside.

Flatten the stuffed ball, dust with flour again, and gently roll it into a square shape (or your preferred shape), being careful not to let the stuffing leak.
Step 4— Cook the Parathas

Heat a tawa (griddle) over medium heat.

Place the paratha on the hot tawa. Cook until the bottom develops light brown spots.

Flip the paratha and brush the cooked side with a little oil, ghee, or butter.

Flip again and apply oil to the other side. Press the edges gently with a spatula to ensure even cooking.

Continue flipping and cooking until both sides are golden brown and crispy.
Step 5— Serve

Remove from heat and serve hot with chutney, ketchup, or pickle.
