2 cups Wheat Flour
1 tsp Carom Seeds (Ajwain)
1 tsp Turmeric Powder
1 tsp Cumin Powder
1 tsp Garam masala Powder (Hot Spices)
1 tsp Chaat Masala
1 tsp Salt
1 tsp Garlic (chopped)
1 tsp Ginger (finely chopped)
1 tsp Green Chilli (finely chopped)
1 tbsp Curd
2 tsp Oil
1 bunch Fenugreek Leaves (Methi)
as needed Water
as needed Clarified Butter (Ghee)
Step 1— Prepare the Dough
1
In a large mixing bowl, combine the wheat flour, ajwain, turmeric powder, cumin powder, garam masala, chaat masala, and salt.
2
Add the chopped garlic, ginger, green chili, curd, and oil to the flour mixture.
3
Incorporate the fresh methi leaves into the bowl and mix all the ingredients thoroughly.
4
Gradually pour in water while mixing to form a soft, manageable dough. Knead the dough for about 3 to 4 minutes until it achieves a smooth consistency.
5
Apply a few drops of oil over the dough ball, cover the bowl with a lid, and let it rest for 30 minutes.
Step 2— Shape the Parathas
1
After the resting period, divide the dough into equal-sized balls.
2
Lightly dust your rolling surface with wheat flour.
3
Place a dough ball on the surface and roll it out evenly into a flat, circular roti of medium thickness.
Step 3— Cook the Parathas
1
Heat a tawa (griddle) over medium-high heat.
2
Once the tawa is hot, carefully place the rolled-out dough onto it.
3
Cook the paratha on both sides until light brown spots begin to appear.
4
Apply a little ghee to both sides and continue to roast until the paratha is cooked through and golden brown.
Step 4— Serve
1
Remove the hot parathas from the tawa and serve them immediately. They pair perfectly with fresh raita, pickles, or a gravy of your choice.
