2 cups Flattened rice (Poha)
1 tbsp Oil
2 tbsp Peanuts
2 tsp Mustard Seeds
8 piece Curry Leaves
1 cup Onion (chopped)
1 tsp Green Chilli (chopped)
1 tsp Turmeric Powder
1 cup Potatoes (boiled and diced)
2 tsp Lemon Juice
2 tbsp Coriander Leaves (chopped)
to taste Salt

Place the thick poha in a bowl and add enough water to submerge it completely. Rinse it thoroughly for 30 seconds, then drain the water. Let it sit for 2 minutes until it softens. You can check the texture by pressing it with your finger, then mix gently with a spoon to ensure there are no lumps.

Heat oil in a pan over medium heat. Add the peanuts and stir until they turn nice and brown. Once fried, remove them from the pan and set aside for later use.

In the same pan with the remaining oil, add the mustard seeds. When they start to splutter, add the curry leaves and chopped onions. Sauté until the onions turn light pink; be careful not to overcook them to maintain their flavor.

Add the green chillies, turmeric powder, and boiled diced potatoes. Add a little salt specifically for the potatoes and mix everything well, keeping the heat on low.

Add the fried peanuts, soaked poha, lemon juice, and chopped coriander leaves to the pan. Mix well, ensuring there are no visible lumps in the poha. Add a final pinch of salt to taste for the poha and mix again.

Turn off the heat, cover the pan with a lid, and let it sit for 2 minutes so the poha can absorb all the flavors.
