Master the art of authentic Dal Tadka with this simple, restaurant-style recipe. Featuring tender pigeon peas cooked to perfection, this dish gets its signature depth from two distinct tempering stages. The first infuses the dal with golden onions, aromatic spices, and ginger-garlic, while the final ghee-based tadka adds a vibrant, smoky finish with cumin and dried red chilies. Serve this comforting, soul-warming dal hot with steamed rice or fresh fulkas for a complete meal.

For the Dal Base:
1 cup Pigeon Peas (Toor Dal)
1 tsp Turmeric Powder
1 tsp Salt
First Tempering (Masala):
1 tbsp Clarified Butter (Ghee)
1 tsp Mustard Seeds
1 springs Curry Leaves
1 no. Onion (finely chopped)
1 tbsp Ginger-Garlic-Green Chilli Paste
1 no. Tomato (finely chopped)
1 tsp Red Chilli Powder
1 tsp Turmeric Powder
1 tsp Coriander Powder
1 tsp Asafoetida Powder (Hing)
Second Tempering (Tadka):
1 tbsp Clarified Butter (Ghee)
1 tsp Cumin Seeds
10 leaves Curry Leaves
3 nos. Dry Red Chilli
1 tsp Red Chilli Powder
Garnish:
handful Coriander Leaves (chopped)
Step 1— Pressure Cook the Dal

Wash the Toor Dal thoroughly under running water and soak it for 20 minutes.

In a pressure cooker, add the soaked dal, turmeric powder, salt, and water.

Close the lid and pressure cook for 7 whistles until the dal is soft and well-cooked.
Step 2— Prepare the First Tempering (Masala)

Heat ghee in a pan over a moderate flame.

Add mustard seeds. Once they begin to crackle, add curry leaves.

Add the finely chopped onions and a pinch of salt to help them cook faster.

Sauté until the onions turn golden brown.

Add the crushed ginger, garlic, and green chilli paste. Stir briefly.

Add the red chilli powder, turmeric powder, coriander powder, and asafoetida. Mix well.

Add the chopped tomatoes and let the masala cook for 4–5 minutes on a medium flame.
Step 3— Combine and Simmer

Transfer the cooked dal into the prepared masala pan.

Mix thoroughly. If the dal is too thick, add a little water to reach your desired consistency.

Stir in the fresh coriander leaves and turn off the flame.
Step 4— Prepare the Second Tempering (Tadka) and Serve

In a separate small utensil or Tadka Waati, heat ghee.

Once hot, add cumin seeds, fresh curry leaves, and whole dried red chillies.

Once the chillies crackle, add a final touch of red chilli powder for color and give it a quick stir.

Immediately pour this hot tempering over the prepared dal.

Give it a final mix and serve hot with steamed rice or fulkas.
