Soft sweet corn kernels are sautéed in butter or ghee for added richness, making this a perfect dish to serve with parathas, puri, or rotis. Main Ingredients:
2 cups Sweet Corn
2 nos. Onion (chopped)
3 nos. Tomato (chopped)
12 nos. Cashew nuts (Grated)
Aromatics & Spices:
3 nos. Green chilli paste
7 cloves Garlic (minced)
1 inch Ginger (crushed)
3 tbsp Oil
2 tsp Clarified Butter (Ghee)
1 leaf Bay Leaf
1 small Cinnamon Stick
2 nos. Green Cardamoms
2 nos. Cloves
1 tsp Cumin Seeds
1 tsp Turmeric Powder
1 tbsp Coriander Powder
1 tbsp Kashmiri Red Chilli Powder
1 tsp Cumin Powder
1 tsp Red Chilli Powder
1 tsp Garam masala Powder (Hot Spices)
1 tsp Dry Fenugreek Leaves (Methi)
to taste Salt
For garnishing Coriander Leaves (chopped)
Step 1— Prepare the Base Ingredients

Boil the sweet corn in salted water until soft and set aside.

Finely chop the onions and tomatoes using a chopper.

Crush the garlic cloves, ginger, and green chillies into a coarse paste.

Soak cashew nuts in warm water for 30 minutes, then blend them with a little water to form a smooth paste.
Step 2— Prepare the Masala Base

Heat oil in a pan and add whole spices (bay leaf, cinnamon, green cardamoms, cloves, and cumin seeds). Sauté briefly over low heat.

Add the chopped onions and cook on medium-high heat until they turn soft and lightly golden brown.

Add the ginger-garlic-chilli paste and sauté for another 2–3 minutes.

Lower the heat and add turmeric powder, coriander powder, Kashmiri red chilli powder, cumin powder, and red chilli powder.

Add a splash of warm water to prevent the spices from burning and sauté until oil separates from the sides.

Add the chopped tomatoes and salt. Cook thoroughly until the water from the tomatoes evaporates and the mixture thickens.
Step 3— Fry the Corn

While the tomato masala is cooking, heat ghee or butter in a separate small pan.

Add the boiled corn and a pinch of salt. Sauté on high heat for 2 minutes to enhance the flavor.
Step 4— Combine and Simmer

Add the prepared cashew paste to the tomato masala base and cook for 2–3 minutes.

Pour in 1–1.5 cups of warm water and bring it to a boil.

Add the fried corn to the gravy and mix well.

Cover and cook on low heat for 5–6 minutes, stirring occasionally.
Step 5— Finishing Touches

Once the oil surfaces, stir in the crushed Kasuri Methi, garam masala, and fresh coriander leaves.

Remove the whole spices before serving. Serve hot with poori, paratha, or chapatis.
