Aromatics and Base:
3 cloves Garlic (minced)
1 inch Ginger (julienned)
3 medium Onion (roughly chopped)
3 nos. Tomato (roughly chopped)
1 tbsp Tomatoes (puréed)
3 tbsp Sunflower Oil
Spices:
1 tsp Cumin Seeds
4 Green Cardamoms
1 small Cinnamon Stick
3 tsp Salt
1 tsp Red Chilli Powder
1 tsp Sugar
1 tbsp Coriander Powder
1 tsp Garam masala Powder (Hot Spices)
Main Ingredients and Finishing:
400 ml Coconut Milk
450 g Paneer Cubes
1 handful Coriander Leaves (finely chopped)
Step 1— Prepare the Aromatic Base

Heat sunflower oil in a pan over medium heat.

Add the chopped garlic and ginger, sautéing for about a minute each until fragrant.

Add the chopped onions and cook for approximately 5 minutes until they begin to soften and change color.

Stir in the chopped tomatoes and cook for another 5 minutes until they become soft.

Remove the mixture from the heat and allow it to cool slightly, then blend it into a smooth paste. Add a splash of water if needed to help the consistency.
Step 2— Cook the Curry
