2 stalks of celery
1 large Carrot (thinly sliced)
1 no. Onion (sliced)
2 tbsp Olive oil
6 cups Cabbage (chopped)
2 cloves Garlic (minced)
1 tsp Oregano
1 tsp Basil Leaves
1 tsp Salt
4 cups of vegetable broth
1 cup Parsley
1 tbsp Lemon Juice
to taste Black Pepper (roughly crushed)
one 14-ounce can of diced tomatoes
Step 1— Prepare the Mirepoix

Slice and dice the celery stalks into bite-sized pieces.

Cut the carrot in half, then halve those pieces lengthwise before slicing and dicing them into uniform chunks.

Slice and dice the onion.

Set these vegetables aside in a bowl.
Step 2— Prepare the Cabbage and Herbs

Slice your half-cabbage into quarters, remove the tough core, and chop it into pieces. You will need about 6–8 cups.

Finely chop the fresh parsley and set it aside in a small bowl.
Step 3— Sauté the Aromatics

Heat the olive oil in a large pot over medium-high heat.

Add the diced onions, carrots, and celery. Sauté for 4–5 minutes until the vegetables begin to soften.

Step 4— Cook the Cabbage
