Bring the irresistible taste of wedding-style cooking to your home with this crispy, chatpati Tawa Bhindi. Made with a simple yet perfect technique, the bhindi turns golden, crunchy, and completely non-slimy, while a rich blend of aromatic spices adds bold, flavorful masala in every bite. This quick and authentic Indian side dish pairs beautifully with hot paratha, roti, or dal-rice, making it a delicious choice for everyday meals, family lunches, or special occasions.

For the Fried Bhindi:
400 g Lady’s Finger
3 tbsp Oil
1 tsp Coriander Powder
pinch Turmeric Powder
1 tsp Kashmiri Red Chilli Powder
1 tsp Garam masala Powder (Hot Spices)
1 tsp Salt
1 tsp Black Salt
1 tsp Dry Mango Powder
1 piece Lemon Juice
For the Gravy:
2 tbsp Oil
large Cumin Seeds
2 medium Onion (finely chopped)
1 tbsp Ginger-Garlic Paste
3 nos. Green Chilli
1 tsp Turmeric Powder
2 tsp Kashmiri Red Chilli Powder
1 tbsp Coriander Powder
as needed Hot Water
2 small Tomato
15 nos. Cashew nuts (Grated)
2 tbsp Curd (whipped)
to taste Salt
as needed Hot Water
handful Ginger (julienned)
2 nos. Green Chilli (slit)
handful Coriander Leaves (chopped)
handful Fresh Coriander
Step 1— Prepare the Lady Fingers (Bhindi)

Select fresh, medium-sized lady fingers that snap when bent.

Wash them thoroughly and pat them completely dry with a cloth. Let them air-dry for a few minutes to ensure no surface moisture remains, as moisture causes sliminess.

Trim the tops and make a single vertical slit through the center of each, checking the inside for cleanliness.
Step 2— Shallow Fry the Bhindi

Heat 3-4 tablespoons of oil in a fry pan over medium heat.

Add the prepared lady fingers and shallow fry them until they are mostly cooked and have turned lightly golden. This process helps eliminate any residual sliminess.

Once done, remove the bhindi from the pan and transfer it to a bowl.
Step 3— Season the Bhindi

In a small bowl, combine coriander powder, a pinch of turmeric, Kashmiri red chilli powder, garam masala, salt, black salt, and dry mango powder (amchur).

Reserve 1-2 teaspoons of this spice mix for the gravy.

Sprinkle the remaining spice mix and the juice of half a lemon over the fried bhindi, tossing gently to coat evenly. Set aside.
Step 4— Prepare the Masala Gravy

Using the same pan (add a little extra oil if needed), add cumin seeds. Once they crackle, add finely chopped onions and sauté until golden brown.

Stir in the ginger-garlic paste and chopped green chillies, cooking until the raw smell is gone.

Lower the flame and add the reserved spices: turmeric, Kashmiri red chilli powder, and coriander powder. Add a small splash of hot water immediately to prevent the spices from burning.

Blend the tomatoes and soaked cashews into a smooth puree. Add this to the pan along with the whisked curd and salt.

Cook the mixture over high heat until the oil begins to separate from the sides of the gravy. If the mixture gets too thick or sticks, add a splash of hot water.
Step 5— Final Assembly

Adjust the gravy consistency with a little hot water so it is semi-thick and luscious.

Add the masala-coated fried bhindi into the gravy.

Toss in the ginger juliennes, slit green chillies, chopped coriander stems, and fresh coriander leaves.

Gently fold everything together to coat the bhindi without breaking it. Serve immediately while hot.
