For Sautéing:
2 tbsp Oil
1 tbsp Clarified Butter (Ghee)
3 nos. Onion (chopped)
3 nos. Green Capsicum (chopped)
For the Gravy Base:
2 nos. Onion (chopped)
4 nos. Tomato (chopped)
1 pinch Salt
For the Masala & Final Assembly:
2 tbsp Oil
1 tbsp Clarified Butter (Ghee)
1 tsp Cumin Seeds
2 tbsp Ginger-Garlic Paste
1 tsp Turmeric Powder
1 tsp Coriander Powder
2 tsp Red Chilli Powder
2 tbsp Yogurt
1 tsp Garam masala Powder (Hot Spices)
to taste Salt
Step 1— Sauté the Vegetables

Heat 2 tablespoons of oil and 1 tablespoon of ghee in a pan.

Add the onions (cut into petals) and chopped capsicums.

Sauté the vegetables for a couple of minutes on medium flame, then remove them from the pan and set aside for later.
Step 2— Prepare the Gravy Base

Using the same pan with the remaining oil, add 2 roughly chopped onions, 4 chopped tomatoes, and a pinch of salt.

Cover and cook the mixture until the onions turn translucent and the tomatoes become mushy.

Allow the mixture to cool down completely, then blend it into a smooth paste.
Step 3— Cook the Masala Gravy

Heat another 2 tablespoons of oil and 1 tablespoon of ghee in a pan.

Add the cumin seeds (jeera) and let them splutter.

Add the ginger-garlic paste, turmeric powder, coriander powder, and red chilli powder. Stir well.

Switch off the gas, add the curd (yogurt), and stir continuously to combine.

Turn the heat back on, add the prepared onion-tomato gravy base, and mix thoroughly.

Cover and let the gravy cook on a low flame for about half a minute.
Step 4— Final Assembly

Add the sautéed capsicum and onions back into the gravy.

Add the garam masala and salt to taste.

Mix everything well and let it cook for another half-minute.

Your Capsicum Masala Curry is ready to serve hot with rotis.
