This traditional condiment is roasted and ground into a thick, rich paste that delivers the perfect balance of spicy, tangy, and savory flavors. Easy to prepare and packed with the goodness of ginger, it is a delicious accompaniment to everyday meals.

100 g Ginger
small Tamarind Extract
1 tbsp Jaggery
2 tbsp Urad Dal (for tempering)
1 tbsp Bengal Gram (Chana Dal)
7 small Dry Red Chilli
1 tbsp Fenugreek Seeds
1 pinch Asafoetida Powder (Hing)
to taste Salt
small Sesame Oil
1 tsp Mustard Seeds
small Curry Leaves (for tempering)

Sauté the Ginger Heat one tablespoon of sesame oil in a pan over medium heat. Add the chopped ginger and sauté for about 4 to 5 minutes until it turns golden brown and the raw aroma disappears. Remove the ginger from the pan and set it aside to cool.

Roast the Lentils and Chilies In the same pan, add another teaspoon of oil. Add the urad dal, chana dal, dry red chilies, and fenugreek seeds. Roast on low heat, stirring constantly, until the lentils turn a deep golden brown and become aromatic. Add the asafoetida at the very end, then remove from heat.

Cool the Ingredients Spread the sautéed ginger and the roasted spice-lentil mixture on a plate. Let everything cool down completely to room temperature. This is crucial for achieving the right consistency during grinding.

Blend into a Paste Transfer the cooled ingredients into a blender. Add the soaked tamarind (along with its water), salt, and jaggery. Grind into a thick, slightly coarse paste. Add a few teaspoons of water only if necessary to help the blades move; the final texture should be dense, not runny.

Prepare the Tempering Heat the remaining sesame oil in the pan. Add the mustard seeds and let them crackle. Toss in the curry leaves and a dried red chili for garnish.

Final Sauté Add the ground ginger paste to the tempering in the pan. Sauté the mixture on low heat for 2 to 3 minutes. This step helps the oil separate slightly and deepens the color to the rich reddish-brown seen in the image.

Serve and Store Turn off the heat and let the thuvaiyal cool. Serve it alongside hot rice, idli, or dosa.
